Wooden Dummy Training often consists of practicing the Wing Chun dummy form. However this need not always be the case and the wooden dummy is simply your 24 hour training ‘buddy’ which can be used as you wish to train any aspect of your Wing Chun Kung Fu or any other style for that matter. The form gives a structure to be trained on the dummy but you could extract any aspect of this and simply drill a small part of it.
The Wing Chun dummy form is separated into 8 sections. Although there is 116 movements in the form it is said there are 108 moves and 8 kicks! 8 is known to be a lucky number in Chinese which might explain this!
Here is a brief summary of each of the 8 sections:

Place right hand over left (simulate a contact) sliding it through and missing a palm strike to the face, glancing past the dummy head. This brief summary is subject to interpretation by individual instructors and the proper techniques cannot be understood without proper training under a qualified instructor. The dummy form is a precise set of movements to be trained within the wing chun or similar system. Details given here are simply an overview of which more detailed insight can be gained through proper training.
